- 8 [8-ounce / 227-g each] potatoes
- Salt, to taste
- 3/4 cup [190 mL] milk
- 8 ounces [227 g] Old Cheddar cheese
- 2 to 3 tablespoons [30 to 45 mL] chopped parsley
- Cayenne pepper [optional]

- With a fork, prick potatoes on all sides.
- Arrange 4 potatoes at a time in the oven, into a circle, onto paper toweling.
- Microwave on 'MAXIMUM' for 12 to 15 minutes, until just tender.
- Cover; leave to rest for 5 minutes.
- Repeat with remaining potatoes.
- Then cut off a thin slice on top of each potato.
- Delicately remove potato meat into a bowl.
- Salt potato meat; puree, pouring in milk.
- Grate half of cheese; mix into puree.
- Stuff potato skins with mixture.
- Cut remaining cheese into 1-inch [2.5-cm] long sticks; well press potato sticks into each potato.
- Microwave potatoes, 4 at a time on 'MAXIMUM', for 2 minutes.
- If desired, broil or bake potatoes in preheated regular oven for 1 to 2 minutes.
- Serve potatoes, sprinkled with chopped parsley and, if desired, with Cayenne pepper.
