Cheesy Potatoes

  • 8 [8-ounce / 227-g each] potatoes
  • Salt, to taste
  • 3/4 cup [190 mL] milk
  • 8 ounces [227 g] Old Cheddar cheese
  • 2 to 3 tablespoons [30 to 45 mL] chopped parsley
  • Cayenne pepper [optional]
  • With a fork, prick potatoes on all sides.
  • Arrange 4 potatoes at a time in the oven, into a circle, onto paper toweling.
  • Microwave on 'MAXIMUM' for 12 to 15 minutes, until just tender.
  • Cover; leave to rest for 5 minutes.
  • Repeat with remaining potatoes.
  • Then cut off a thin slice on top of each potato.
  • Delicately remove potato meat into a bowl.
  • Salt potato meat; puree, pouring in milk.
  • Grate half of cheese; mix into puree.
  • Stuff potato skins with mixture.
  • Cut remaining cheese into 1-inch [2.5-cm] long sticks; well press potato sticks into each potato.
  • Microwave potatoes, 4 at a time on 'MAXIMUM', for 2 minutes.
  • If desired, broil or bake potatoes in preheated regular oven for 1 to 2 minutes.
  • Serve potatoes, sprinkled with chopped parsley and, if desired, with Cayenne pepper.
