- 2 1/4 pounds [1 kg] well scrubed potatoes, quartered
- 1 large onion, chopped
- 2 bay leaves
- 2 sprigs fresh thyme, 2 pinches dried
- 2 sprigs fresh sage, 2 pinches dried
- 1 tablespoon [15 mL] coriander seeds, crushed
- Salt and pepper, to taste
- 2 ounces [56 g] butter

- Lay half of potatoes over the bottom of a 10-cup [2.5-L] microwave-safe dish; sprinkle with half of chopped onion.
- Add 1 bay leaf, half of thyme and half of sage.
- Repeat layers.
- Sprinkle with coriander seeds; cover.
- Microwave on 'MAXIMUM' for 30 to 35 minutes, stirring potatoes delicately at half-time.
- Season with salt and pepper, dot with butter and serve.
To Vary
- Use well scrubbed same size whole new potatoes, instead of quartered potatoes.
- Use mint instead of thyme and sage.
