Fine Herbs Potatoes [microwave]

  • 2 1/4 pounds [1 kg] well scrubed potatoes, quartered
  • 1 large onion, chopped
  • 2 bay leaves
  • 2 sprigs fresh thyme, 2 pinches dried
  • 2 sprigs fresh sage, 2 pinches dried
  • 1 tablespoon [15 mL] coriander seeds, crushed
  • Salt and pepper, to taste
  • 2 ounces [56 g] butter
  • Lay half of potatoes over the bottom of a 10-cup [2.5-L] microwave-safe dish; sprinkle with half of chopped onion.
  • Add 1 bay leaf, half of thyme and half of sage.
  • Repeat layers.
  • Sprinkle with coriander seeds; cover.
  • Microwave on 'MAXIMUM' for 30 to 35 minutes, stirring potatoes delicately at half-time.
  • Season with salt and pepper, dot with butter and serve.
To Vary
  • Use well scrubbed same size whole new potatoes, instead of quartered potatoes.
  • Use mint instead of thyme and sage.
