Cabbage 1900 [microwave]

It is most often called 'Cabbage 1900' but, even though I really tried to find out why, I never could. A favorite dish from the Old Quebec in Quebec City, it is one of my favorites. I often add bacon instead of salted pork, as it is easier to find.
  • 1/2 cup [125 mL] salt pork or bacon, diced
  • 1 small or medium-size cabbage, quartered
  • 4 apples, peeled and sliced
  • 1 tablespoon [15 mL] freshly squeezed lemon juice or cider vinegar
  • 2 tablespoons [30 mL] brown sugar
  • 2 to 4 whole cloves
  • Arrange salt pork or bacon dices into a microwave-safe dish.
  • Microwave on 'HIGH' for 3 minutes, stirring once.
  • Well mix cabbage, apple slices, lemon juice or cider vinegar, brown sugar and cloves.
  • Cover dish; microwave on 'HIGH' for 4 minutes.
  • Mix until well blended.
  • Microwave on 'MEDIUM' for 5 to 7 minutes.
  • Stir, and serve.
