Buying brussels sprouts
They usually are cut off the stem, to be sold into 2-cup [500-mL] containers.
It is important to choose Brussels sprouts that are as firm as possible and of equal size, for easier cooking. The size of Brussels sprouts is up to your liking.
Sometimes, in the fall, it is possible to buy whole stems of Brussels sprouts. Stems are just beautiful and I, for a special occasion, sometimes like to have one as a centerpiece.
  • 1 pound [454 g] Brussels sprouts
  • 1/4 cup [60 mL] water
  • 1/4 teaspoon [1 g] sugar
Preparation
  • Thoroughly wash Brussels sprouts into a bowl filled with cold water.
  • Drain Brussels sprouts into a sieve for 10 to 15 minutes.
  • Remove outer and bruised leaves.
  • If there are many tiny Brussels sprouts, set them aside, as bigger ones take longer to cook and smaller ones will be overcoked [they must be cooked separately].
  • Arrange Brussels sprouts into a microwave-safe dish; pour in water and sprinkle with sugar.
  • Cover; microwave on 'HIGH' for 6 to 8 minutes [as time may vary according to the size of each Brussels sprout, check for doneness, with a fork, after 6 minutes].
  • Leave to rest, covered for 3 to 5 minutes, before serving.
