Juniper berry is the small fruit of the juniper [tree]. Juniper berries are small, round, purple or black; they are used in the making of gin, which can give you an idea of their taste, which is sweet and nice. It is easy to remove the berries once the cabbage is done, as they are really visible.
  • 2 tablespoons [30 g] butter
  • 5 to 6 cups [1.25 to 1.5 L] chopped cabbage
  • 2 apples [cores removed] peeled and sliced
  • 6 Juniper berries [optinal]
  • 3 tablespoons [45 mL] cornstarch
  • 1/2 cup [125 mL] white wine or consomme
  • Salt and pepper, to taste
  • Into a large microwave-safe dish with a lid, melt butter on 'HIGH' for 2 minutes.
  • Mix in chopped cabbage and apple slices, until well coated with melted butter.
  • Add Juniper berries; pour in already mixed together cornstarch and white wine or consomme.
  • Cover; microwave on 'HIGH' for 8 minutes; stir.
  • If needed, microwave for 1 to 2 minutes longer.
  • Salt and pepper.
  • Remove Juniper berries and serve.
