In Holland and in Germany, this cabbage is served hot, along with roasted pork or baked ham.
Hint: to soften, into a glass bowl, microwave together 1 cup [250 mL] brown sugar, and 1 slice fresh bread or an apple segment. Cover; microwave on 'HIGH' for 30 seconds to 1 minute.

- 4 to 5 cups [1 to 1.25 L] finely chopped red cabbage
- 2 cups [500 mL] unpeeled apples, thinly sliced
- 3 tablespoons [45 mL] cider or wine vinegar
- 1/4 cup [60 mL] water
- 1/3 cup [80 mL] brown sugar
- 6 cloves
- 1 teaspoon [5 mL] salt
- 3 tablespoons [45 g] butter

- Into a 6-cup [1.5 L] microwave-safe casserole, mix together chopped cabbage, apple slices, cider or wine vinegar, water, brown sugar, cloves and salt.
- Stir until thoroughly mixed.
- Cover and microwave on 'HIGH' for 4 to 5 minutes.
- Thoroughly mix; check for seasonings.
- If needed, microwave for 1 minute more.
- Stir in butter, until well mixed in.
- Microwave on 'HIGH' for 1 minute.
- Stir, and serve.
