Indonesian-Style Cauliflower

Comments: It is a cauliflower made with curry, with a fresh ginger-taste. An elegant, light lunch served with a rice into which is mixed, just before seving, a handful of your choice of nuts.

  • 4 tablespoons [60 mL] vegetable oil
  • 2 teaspoons [10 mL] freshly grated gingerroot
  • 1/2 teaspoon [2.5 mL] curcuma
  • 2 teaspoons [10 mL] coriander
  • 1 or 2 garlic cloves, finley chopped
  • 1 medium-size cauliflower
  • 1/4 cup [60 mL] water
  • 1/4 teaspoon [1 g] sugar
  • Mix together vegetable oil, grated gingerroot, curcuma, coriander and garlic cloves.
  • Set aside.
  • Cut cauliflower into floewerets.
  • Arrange flowerets into a microwave-safe dish.
  • Pour in water; sprinkle with sugar and pour in reserved vegetable oil mixture.
  • Cover and microwave on 'HIGH', for 2 minutes.
  • Check for doneness; if needed, microwave for 2 minutes more.
  • Leave to rest for 5 minutes, before serving.
