Crunchy Hot Celery Slices

Be careful not to overcook celery; the secret is to keep it crunchy.

  • 6 to 8 celery stalks
  • 1/4 cup [60 mL] consomme
  • 2 tablespoons [30 mL] vegetable oil
  • 1 teaspoon [5 mL] well-drained capers
  • 1/4 teaspoon [1 mL] tarragon
  • Salt and pepper, to taste
  • 1 teaspoon [5 mL] wine or malt vinegar
  • Salt and pepper, to taste
  • Thinly slice celery stalks, sideways; transfer slices into a microwave-safe dish.
  • Pour in consomme; mix well.
  • Cover dish; microwave on 'HIGH' for 3 minutes.
  • Celery must remain crunchy.
  • Drain and transfer celery slices back into microwave-safe dish.
  • Mix in vegetable oil, capers and tarragon.
  • Cover and microwave on 'HIGH' for 1 minute.
  • Pour into a serving dish; stir in wine or malt vinegar, salt and pepper.
  • Serve, lukewarm or at room temperature; do not refrigerate.
