- 6 to 8 celery stalks
- 1/4 cup [60 mL] consomme
- 2 tablespoons [30 mL] vegetable oil
- 1 teaspoon [5 mL] well-drained capers
- 1/4 teaspoon [1 mL] tarragon
- Salt and pepper, to taste
- 1 teaspoon [5 mL] wine or malt vinegar
- Salt and pepper, to taste

- Thinly slice celery stalks, sideways; transfer slices into a microwave-safe dish.
- Pour in consomme; mix well.
- Cover dish; microwave on 'HIGH' for 3 minutes.
- Celery must remain crunchy.
- Drain and transfer celery slices back into microwave-safe dish.
- Mix in vegetable oil, capers and tarragon.
- Cover and microwave on 'HIGH' for 1 minute.
- Pour into a serving dish; stir in wine or malt vinegar, salt and pepper.
- Serve, lukewarm or at room temperature; do not refrigerate.
