- 1 medium-size cauliflower
- 3 tablespoons [45 mL] water
- 3 green onions, finely minced [green and white parts]
- 3 tablespoons [45 mL] olive or vegetable oil
- 1 tablespoon [15 mL] freshly squeezed lemon juice
- 1/2 teaspoon [2.5 mL] prepared mustard
- 1/4 teaspoon [1 mL] salt
- Pinch of pepper

- Cut cauliflower into flowerets, as you would for plain cauliflower.
- Arrange flowerets into a microwave-safe dish; pour in water, cover dish and microwave on 'HIGH' for 6 to 8 minutes.
- After 6 minutes, check for doneness, with the tip of a knife.
- Drain flowerets; arrange into a nice salad bowl.
- Sprinkle flowerets with minced green onions.
- Mix together olive or vegetable oil, prepated mustard, salt and pepper; pour all over cualiflower flowerets.
- Just before serving, stir mixture.
- Serve, lukewarm or at room temperature.
- Do not refrigerate.
