Winter Casserole [microwave]

A nice Italian dish to serve as a light meal, along with boiled rice or noodles.

  • 1/4 cup [60 mL] vegetable oil or butter [60 g]
  • 1 [19-ounce / 540-mL] can tomatoes
  • 4 to 5 cups [1 to 1.25 L] unpeeled zucchini, diced
  • 1 green pepper, diced
  • 1 cup [250 mL] frozen small peas
  • 1 cup [250 mL] frozen corn kernels [optional]
  • 1 cup [250 mL] small diced potatoes
  • 2 medium-size onions, thinly sliced
  • 1 teaspoon [5 mL] savory
  • 1 teaspoon [5 mL] dill
  • 1 1/2 teaspoons [7.5 mL] salt
  • 1/4 teaspoon [1 mL] pepper
  • Into a 6-cup [1.5-L] bowl, heat vegetable oil or butter on 'HIGH' for 3 minutes.
  • Mix in tomatoes, zucchini and green pepper dices, small peas, corn kernels, potato dices, onion slices, savory, dill, salt and pepper.
  • Thoroughly mix.
  • Microwave on 'HIGH' for 15 minutes, uncovered.
  • Thoroughly mix.
  • Microwave on 'MEDIUM-HIGH' for 10 minutes more,
  • Using a slotted spoon, transfer vegetables into a serving dish.
  • Serve liquid on the side, into a sauce-boat.
