Zucchini Casserole [microwave]

A special mixture of vegetables and ground beef, pork, lamb, or even some leftover roasted beef, ground; an economical, easy to do dish.
Servings: 3 or 4
  • 2 tablespoons [30 mL] vegetable oil or margarine [30 g]
  • 1 large onion, finely chopped
  • 1/2 to 1 pound [227 to 454 g] ground meat, cooked or not
  • 1 small red or green pepper, diced
  • 1 teaspoon [5 mL] savory or sage
  • 2 cups [500 mL] peeled, diced fresh tomatoes or canned whole tomatoes, drained
  • 1 teaspoon [5 g] sugar
  • 4 to 5 cups [1 to 1.25 L] zucchini slices
  • Into a 6-cup [1.5-L] dish, microwave vegetable oil or margarine on 'HIGH' for 1 minute.
  • Well mix in onion; microwave on 'HIGH' for 2 minutes; mix well.
  • Well mix in cooked or not ground meat.
  • Microwave uncooked ground meat on 'HIGH for 4 minutes; reheat cooked ground meat on 'HIGH' for 2 minutes; mix well.
  • Mix in red or green pepper dices, savory or sage, tomatoes, sugar and zucchini slices; mix well.
  • Cover dish; microwave on 'HIGH' for 10 to 12 minutes, stirring once.
