Glazed Carrots

Here are some French-style glazed carrots, an elegant dish to serve along with buttered green [spinach] noodles and sauteed chicken livers.
Large, winter carrots can also be used.

  • 1 pound [454 g] large carrots
  • 3 tablespoons [45 g] butter
  • 1/3 cup [80 mL] water
  • 1/4 cup [60 mL] light brown sugar
  • 2 tablespoons [30 mL] Dijon mustard
  • 2 tablespoons [30 mL] minced parsley
  • 3 green onions, minced
  • Peel and thinly slice carrots.
  • Into a 4-cup [1-L] microwave-safe dish, melt butter on 'HIGH' for 1 minute.
  • Well stir in carrot slices and water; cover and microwave on 'HIGH' for 7 minutes.
  • Stir; mix in light brown sugar, Dijon mustard, minced parsley and green onions.
  • Thoroughly mix.
  • Microwave, uncovered on 'MEDIUM' for 5 to 7 minutes, stirring 2 to 3 times while cooking.
  • Serve.
