- Remove needed stalks from celery; either slice each stalk into 1 to 2-inch [2.5 to 5-cm] pieces or cut stalks into sticks or dices.
- Do not forget that for cooking, larger outside stalks are the best, just as center ones are best eaten raw.
- Arrange prepared celery into a dish; sprinkle with sugar and pour in cold water.
- Microwave on 'HIGH' for 4 to 6 minutes or microwave on auto-sensor as hard vegetables.
- When done, drain well; set aside.
- Melt butter for 1 minute on 'HIGH'.
- Mix in hot mustard, salt and nutmeg, until well blended; mix in cooked, reserved celery dices.
- Thoroughly mix.
- Microwave on 'HIGH' for 1 minute.
- Serve.
