Carrots, Celery and Onions

  • 5 medium-size carrots
  • Cold water
  • 1 tablespoon [15 g] butter
  • 1 cup [250 mL] celery dices
  • 1 large onion, chopped
  • 1/2 teaspoon [2.5 g] sugar
  • Grated rind of 1/2 a lemon
  • Peel and thinly slice carrots.
  • Cover carrot slices with cold water; set aside for 15 minutes, then drain.
  • As there is no liquid added to this recipe, it is really important to soak carrot slices before mixing in any other ingredient.
  • Into a 6-cup [1.5-L] microwave-safe dish, melt butter on 'HIGH' for 1 minute.
  • Well mix in drained carrot slices, celery dices, chopped onion, sugar and lemon rind.
  • Stir, cover and microwave on 'HIGH', for 6 to 8 minutes stirring after 4 minutes.
