Celeriac Bolognese-Style

In Bologna, Italy, celeriac is baked into the oven, alternately layered with grated Swiss cheese. It is, as far as I am concerned, the best way to serve celeriac, along with roasted chicken or any other poultry.

  • 1 celeriac
  • 2 or 3 lemon slices
  • 2 tablespoons [30 g] softened butter
  • 2 tablespoons [30 mL] water
  • 1/2 cup [115 g] grated Gruyere cheese
  • Salt and pepper, to taste
  • Peel and thinly slice celeriac.
  • Rub each slice, on both sides, with lemon; arrange celeriac slices into a dish.
  • Pour in water, cover dish and microwave on 'HIGH' for 6 to 8 minutes, until tender.
  • Drain.
  • Cover the bottom of a serving bowl with celeriac slices.
  • Brush with half of the melted butter; salt, pepper and sprinkle with half of grated cheese.
  • Top with remaining celeriac slices, then with remaining grated cheese; salt and pepper.
  • Set aside, cover and leave to rest, at room temperature, until ready to serve.
  • Just before serving, reheat into serving dish on 'MEDIUM-HIGH' for 4 minutes,
