Cooked Whole Celeriac

  • 1 medium-size celeriac
  • 1/2 teaspoon [2.5 mL] salt
  • 1/2 teaspoon [2.5 g] sugar
  • Softened or melted butter [optional]
  • Minced parsley or chives [optional]
  • Peel celeriac.
  • Onto a plate, mix together salt and sugar; roll peeled celeriac into mixture.
  • Loosely wrap coated celeriac into plastic wrap.
  • Transfer celeriac onto a microwave-safe rack.
  • Microwave celeriac on 'HIGH' for 8 to 10 minutes, according to the size of the celeriac.
  • Check for doneness with the tip of a knife, piercing through the plastic wrap.
  • Leave to rest for 10 minutes before unwrapping.
  • To serve, unwrap celeriac and:
  • 1 - Roll celeriac into softened or melted butter; sprinkle all over with minced parsley or chives.
  • 2 - Mash celeriac with butter, until creamy; mix in minced parsley or chives.
  • 3 - Dice celeriac; mix into a stew.
