Creamy Mushrooms [microwave]

  • 1 medium-size onion, finely chopped
  • 1/2 pound [227 g] fresh mushrooms, sliced
  • 1/4 cup [60 mL] cold water
  • 2 tablespoons [30 g] butter
  • 2 tablespoons [17.5 g] flour
  • 1/2 cup [125 mL] sour cream
  • Salt and pepper, to taste
  • If you have a deep-enough microwave-safe grill dish, preheat it on 'HIGH' for 6 minutes.
  • If not, use an 8-inch [20-cm] ceramic dish, preheated on 'HIGH' for 3 minutes [onion will be lighter, but still excellent].
  • Arrange chopped onion into preheated dish, without removing dish from microwave-oven.
  • Microwave on 'HIGH' for 1 minute.
  • Remove dish from oven; stir lightly browned onion, scraping the bottom of the dish.
  • Add mushroom slices.
  • Thoroughly mix, still scraping the bottom of the dish.
  • Pour in water; mix and then microwave on 'HIGH' for 3 minutes.
  • Drain mushrooms, reserving cooking liquids.
  • Into a clean microwave-safe dish, melt butter on 'HIGH' for 2 minutes.
  • Stir in flour; then well mix in reserved mushroom cooking liquids.
  • Stir in sour cream, salt and pepper.
  • Just before serving, reheat mixture on 'HIGH' for 2 to 3 minutes, stirring once.
