Pureed Celeriac [microwave]

  • 2 medium-size celeriacs
  • 1/2 cup [125 mL] milk
  • 1/2 teaspoon [2.5 mL] salt
  • 1/2 teaspoon [2.5 g] sugar
  • 1/2 cup [125 mL] chopped parsley
  • 2 tablespoons [30 g] butter
  • Salt and pepper, to taste
  • Peel and slice celeriacs.
  • Mix together celeriac slices, milk, salt and sugar.
  • Microwave on 'HIGH' for 8 minutes.
  • Drain celeriac slices, reserving cooking milk; puree into a food processor, into a blender or mash celeriac with a fork.
  • Mix in chopped parsley, butter, salt, pepper and, if needed, a little of cooking milk.
  • Arrange into a vegetable serving dish; cover.
  • Reheat on 'HIGH' for 2 minutes.
