Olive-Stuffed Oven-Baked Potatoes [microwave]

Comments: If desired, bake potatoes into a regular oven.

  • 4 medium-size potatoes
  • 1/2 cup [125 mL] plain yogurt
  • 3 tablespoons [45 mL] chopped stuffed olives
  • 1 teaspoon [5 mL] freshly chopped parsley
  • 1 tablespoon [15 mL] chopped green onion
  • Salt and pepper, to taste
  • Prick potatoes with a fork.
  • Arrange potatoes into the center of a microwave-safe plate; microwave on 'MAXIMUM' for 14 to 16 minutes.
  • Meanwhile, mix together yogurt, stuffed olives and chopped parsley and green onion; salt and pepper.
  • As soon as potatoes are done, cut an 'X' on top of each one; press open.
  • Stuff potatoes with yogurt/olive mixture, and serve.
