- 4 medium-size potatoes
- 1/2 cup [125 mL] plain yogurt
- 3 tablespoons [45 mL] chopped stuffed olives
- 1 teaspoon [5 mL] freshly chopped parsley
- 1 tablespoon [15 mL] chopped green onion
- Salt and pepper, to taste

- Prick potatoes with a fork.
- Arrange potatoes into the center of a microwave-safe plate; microwave on 'MAXIMUM' for 14 to 16 minutes.
- Meanwhile, mix together yogurt, stuffed olives and chopped parsley and green onion; salt and pepper.
- As soon as potatoes are done, cut an 'X' on top of each one; press open.
- Stuff potatoes with yogurt/olive mixture, and serve.
