Buttery New Potatoes [microwave]

  • 3 ounces [85 g] unsalted butter
  • 2 pounds [1 kg] tiny new potatoes, well scrubbed and pricked with a fork
  • Salt and pepper, to taste
  • Fresh dill or parsley sprigs
  • Into a 5-cup [1.25-L] microwave-oven-safe casserole, melt unsalted butter, covered on 'MAXIMUM' for 1 minute.
  • Add potatoes; pepper generously and stir until potatoes are well coated with melted butter.
  • Cover casserole; microwave on 'MAXIMUM' for 12 minutes, until just tender.
  • Leave to rest for 3 minutes; if desired, season with salt and more pepper.
  • Arrange potatoes into a serving dish; pour melted butter all over.
  • Serve immediately, garnished with fresh dill or parsley sprigs.
