Cheddar Cheese Stuffed Potatoes

  • 4 potatoes
  • 1/2 cup [115 g] grated Cheddar cheese
  • 1/3 to 1/2 cup [80 to 125 mL] milk
  • 2 tablespoons [30 g] softened butter
  • 1 egg
  • Salt and pepper, to taste
  • Paprika
  • Using a fork, prick potatoes; microwave potatoes on 'MAXIMUM' for 10 to 15 minutes.
  • Cut top of each potato lengthwise; remove meat, being careful not to cut through the skin.
  • Crush potato meat.
  • Well mix in grated Cheddar cheese, milk, softened butter, egg, salt and pepper.
  • Fill potato skins with mixture; sprinkle with paprika.
  • Cover stuffed potatoes with wax paper; microwave on 'MEDIUM' for 4 minutes.
  • Serve immediately.
