- 5 potatoes
- 1/4 cup [60 mL] warm milk
- 2 tablespoons [30 g] butter
- 1/4 cup [60 mL] fried bacon slices, crumbled
- 2 tablespoons [30 mL] chopped chives
- Salt and white pepper
- 1/2 cup [125 mL] cheese curds
- 5 fresh parsley sprigs

- Rinse then scrub potatoes.
- Using a fork, well prick potatoes; half potatoes lengthwise.
- Microwave potato halves on 'MAXIMUM' for 9 minutes.
- Preheat oven broiler.
- Carefully remove meat from potato halves reserving peels [to be stuffed].
- Into a bowl, crush potato meat.
- Mix in warm milk, butter, bacon crumbs and chopped chives.
- Salt and pepper, to taste.
- Stuff reserved potato peels with potato mixture.
- Evenly top mixture with cheese curds.
- Brown under preheated oven broiler.
- Serve, garnished with parsley sprigs.
