Stuffed Potato Halves [+ oven broiler]

  • 5 potatoes
  • 1/4 cup [60 mL] warm milk
  • 2 tablespoons [30 g] butter
  • 1/4 cup [60 mL] fried bacon slices, crumbled
  • 2 tablespoons [30 mL] chopped chives
  • Salt and white pepper
  • 1/2 cup [125 mL] cheese curds
  • 5 fresh parsley sprigs
  • Rinse then scrub potatoes.
  • Using a fork, well prick potatoes; half potatoes lengthwise.
  • Microwave potato halves on 'MAXIMUM' for 9 minutes.
  • Preheat oven broiler.
  • Carefully remove meat from potato halves reserving peels [to be stuffed].
  • Into a bowl, crush potato meat.
  • Mix in warm milk, butter, bacon crumbs and chopped chives.
  • Salt and pepper, to taste.
  • Stuff reserved potato peels with potato mixture.
  • Evenly top mixture with cheese curds.
  • Brown under preheated oven broiler.
  • Serve, garnished with parsley sprigs.
