Creamy Spinach [microwave]

  • 10 ounces [283 g] frozen chopped spinach
  • 2 tablespoons [30 g] butter
  • 1 tablespoon [8.75 g] flour
  • 1/4 teaspoon [1 mL] nutmeg
  • 3/8 cup [90 mL] cream [15% m.s.g.]
  • Salt and pepper, to taste
  • Into a large microwave-safe casserole, microwave spinach, covered, for 7 minutes on 'MAXIMUM', stirring once.
  • Drain and reserve.
  • Into a small covered bowl or measuring cup, melt butter for 15 to 30 seconds, on 'MAXIMUM'.
  • Stir in flour, nutmeg and cream; salt and pepper.
  • Microwave for 2 minutes on 'MAXIMUM', until thickened, stirring well after 1 minute.
  • Stir sauce; pour sauce over reserved spinach and stir.
