Porcupine Meatballs

  • 1 pound [454 g] ground beef
  • 1 pound [454 g] ground pork
  • 1 onion, larger than an egg, finely chopped
  • 1/2 cup [125 mL] white rice, boiled then drained
  • 2 [10-ounce / 284-mL] each cans cream of tomato soup concentrate
  • At least 1 [10-ounce / 284-mL] can water
  • 3 tablespoons [45 mL] ketchup
  • Salt and pepper, to taste
  • Into a bowl, mix together ground beef and pork, chopped onion and drained white rice.
  • Salt and pepper mixture.
  • Shape mixture into really round balls.
  • Into a casserole, mix together cream of tomato soup concentrate and water.
  • Bring mixture to a boil before delicately adding meatballs.
  • Leave to simmer for 1 hour.
  • Well stir in ketchup, and serve.
