Michele's Veal Roast

  • 1 fat slice salted pork
  • 1 [6-pound / 2.7 kg] shoulder of veal
  • Minced garlic, to taste
  • Chopped onion, to taste
  • Salt and pepper, to taste
  • Preheat oven to 325°F [160°C].
  • Lay slice of salted pork over the bottom of a roasting pan.
  • Sit shoulder of veal on top of salted pork; sprinkle veal all over with minced garlic and chopped onion.
  • Salt and pepper meat; cover roasting pan.
  • Roast veal into preheated oven for approximately 3 hours, or for at least 25 minutes per pound [454 g].
