- 1 fat slice salted pork
- 1 [6-pound / 2.7 kg] shoulder of veal
- Minced garlic, to taste
- Chopped onion, to taste
- Salt and pepper, to taste

- Preheat oven to 325°F [160°C].
- Lay slice of salted pork over the bottom of a roasting pan.
- Sit shoulder of veal on top of salted pork; sprinkle veal all over with minced garlic and chopped onion.
- Salt and pepper meat; cover roasting pan.
- Roast veal into preheated oven for approximately 3 hours, or for at least 25 minutes per pound [454 g].
