Lise's Creole Rice

  • 2 tablespoons [30 mL] vegetale oil
  • 4 green onions or 1 large onion, chopped
  • 1/4 sweet green pepper, membranes removed and seeded, chopped
  • 2 cups [500 mL] hot water
  • 1 teaspon [5 mL] salt
  • 1/2 cup [125 mL] raw rice
  • Heat oil into a casserole.
  • Brown together chopped green or regular onion and sweet green pepper into hot oil.
  • Pour hot water into casserole; salt, then mix in rice.
  • Leave to simmer for 20 minutes, before serving.
