- 24 large red tomatoes, well rinsed, seeded and chopped
- 12 apples, peeled, cored the chopped
- 6 onions, chopped
- 1 celery, chopped
- 3 sweet red peppers, membranes removed and seeded, chopped
- Approximately 5 'small' cups [1.25 L] vinegar
- 4 tablespoons [60 mL] pickling salt
- 3 cups [600 g] sugar
- 3 teaspoons [15 mL] mixed spices [tied into cotton cheese cloth]
- Hot sterilized jars and covers

- Into a large casserole, mix together chopped red tomatoes, apples, onions, celery and sweet red peppers.
- Pour vinegar over vegetables; sprinkle mixture with pickling salt.
- Leave to marinated overnight.
- On the next day, mix in sugar and mixed spices.
- Bring mixture to a boil; leave to simmer really slowly for 4 to 5 hours.
- Pour hot mixture into hot sterilized jars; seal jars.
