Potato Patties

  • 2 cups [500 mL] crushed boiled drained potatoes
  • 1 egg, beaten
  • 2 tablespoons [30 g] butter
  • 1 cup [140 g] flour
  • 3 teaspoons [15 mL] baking powder
  • 1/2 teaspoon [2.5 mL] salt
  • Butter, to fry patties
  • Beat togehter crushed potatoes, beaten egg and butter until smooth.
  • Sift together flour, baking powder and salt.
  • Add dry ingredients into crushed potatoes mixture; lightly knead mixture to well mix together all ingredients.
  • Transfer mixture onto a lightly floured working surface; roll mixture until 1/4-inch [6-mm] thick round.
  • Heat some butter into a frypan.
  • Cut potato mixture into wedges; brown into hot melted butter for approximately 5 minutes on each side.
  • Serve, really hot.
