Therese's Pork Drippings

  • 1/2 pound [227 g] chopped lard
  • 1 medium onion, chopped
  • 2 tablespoons [30 mL] liquid beef broth concentrate
  • 1 [10-ounce / 284-mL] can beef consomme concentrate
  • 1 tablespoon [7 g] unflavored gelatine
  • Melt chopped lard into a medium-size casserole; lightly brown chopped onion into melted fat.
  • Mix in liquid beef broth concentrate and beef consomme.
  • Bring mixture to a boil; leave to boil for a few minutes.
  • Pressing, strain mixture into a bowl.
  • Sprinkle liquid with unflavored gelatine; stir until completely melted.
  • Pour mixture into small bowl; leave to cool completely.
  • Refrigerate until set.
