Uncooked Chocolate Fudge

  • 4 [1-ounce / 28-g] each squares cooking chocolate
  • Butter [as big a piece as 1 egg]
  • 2 eggs, well beaten
  • 2 1/2 cups [625 mL] icing sugar, sifted
  • 1/2 teaspoon [2.5 mL] vanilla
  • Into the top part of a double boiler, melt together chocolate squares and butter over hot, yet not boiling water.
  • Remove from heat and leave to cool.
  • Into a bowl, beat together beaten eggs and sifted icing sugar.
  • Then mix in cooled melted chocolate mixture and vanilla.
  • Pour into a mold; refrigerate fudge until set, before cutting it into squares.
