Whole Cranberry Jelly

  • 4 cups [1 L] fresh cranberries, rinsed
  • 2 cups [400 g] sugar
  • 1 cup [250 mL] water
  • Into a large casserole, mix together rinsed cranberries, sugar and water.
  • Bring mixture to a boil over high heat.
  • Leave to boil for 5 to 10 minutes stirring, until cranberries just start to burst.
  • Remove from heat and pour into small bowls, or hot sterilized jars.
  • Seal jars and leave to cool completely.
  • Cover cooled mixture in bowls if using.
  • Refrigerate cooled cranberries until ready to serve.
