Gingerbread

Comments: If desired, add some raisins or chopped nuts to this dough.
  • 1/3 cup [75 g] shortening
  • 1/2 cup [100 g] sugar
  • 1 egg, at room temperature
  • 1 3/4 cups [245 g] flour
  • 1 teaspoon [5 mL] baking powder
  • 1 pinch salt
  • 1/2 teaspoon [2.5 mL] cinnamon
  • 1/2 teaspoon [2.5 mL] ground clove
  • 1/2 teaspoon [2.5 mL] ground ginger
  • 1 teaspoon [5 mL] baking soda
  • 3/4 cup [190 mL] sour milk
  • 1/2 cup [125 mL] molasses
  • Preheat oven to 375°F [190°C].
  • Beat together shortening, sugar and egg.
  • Sift together flour, baking powder, salt and ground cinnamon and ginger.
  • Dilute baking soda into sour milk, then mix in molasses.
  • Alternately with sour milk mixture, mix sifted dry ingredients into first mixture.
  • Pour dough into a buttered floured bread pan.
  • Bake bread into preheated oven, for 30 minutes.
  • Unmold done gengerbread onto a wire rack; leave to cool completely.
