Aunt Aurore's Date Bread

Comments: If desired, just before baking, beat 1 egg into just a little milk; pour mixture all over rolled oats mixture to help browning processing.
  • 1 cup [250 mL] stoned dates
  • 1 cup [250 mL] brown sugar
  • 1/2 cup [125 mL] water
  • 1/2 cup [115 g] butter, creamed
  • 1 cup [250 mL] rolled oats
  • 1 cup [140 g] flour
  • 1 teaspoon [5 mL] baking soda
  • 1 pinch salt
  • Preheat oven to 350°F [180°C].
  • Boil together dates, 1/2 cup [125 mL] of brown sugar and water until just starting to thicken; remove from heat.
  • Into a bowl, well mix together creamed butter, rolled oats, flour, baking soda and salt.
  • Press half of mixture over the bottom of a square 8-inch [20-cm] cake pan.
  • Evenly spread date mixture over rolled oats mixture.
  • Sprinkle date mixture all over with remaining rolled oats mixture.
  • Brown into preheated oven for approximately 30 minutes, until golden.
