Sponge Cake

  • 1 1/3 cups [185 g] flour
  • 1 teaspoon [5 mL] baking powder
  • 1 pinch salt
  • 2 eggs
  • 2/3 cup [130 g] sugar
  • 6 tablespoons [90 mL] water
  • 1 teaspoon [5 mL] maple extract
  • Preheat oven to 325°F [160°C].
  • Sift together flour, baking powder and salt; set aside.
  • Beat eggs until foamy.
  • Then slowly beat in sugar, water and maple extract, until mixture shapes into a thread when lifting beaters.
  • Fold mixture into reserved flour mixture.
  • Pour dough into a greased and floured square 9-inch [23-cm] cake pan.
  • Bake into preheated oven, for 25 minutes.
  • Leave to cool slightly in pan over a wire rack, before unmolding cake onto wire rack.
  • Leave to cool completely.
