Congolese-Style Squares

Servings: Approximately 48 squares
  • 2 3/4 cups [385 g] flour
  • 2 1/2 teaspoons [12.5 mL] baking powder
  • 1/2 teaspoon [2.5 mL] salt
  • 2/3 cup [150 g] butter
  • 2 1/4 cups [560 mL] brown sugar [1 pound - 454 g]
  • 3 eggs
  • 1 cup [250 mL] chopped nuts
  • 6 ounces [170 g] chocolate chips
  • Preheat oven to 350°F [180°C].
  • Sift together flour, baking powder and salt; set aside.
  • Beat together butter and brown sugar before beating in eggs, 1 at a time, beating well after each addition.
  • Then mix in reserved dry ingredients, chopped nuts and chocolate chips.
  • Grease a rectangular 9 x 13-inch [23 x 33-cm] cake pan; evenly pour in dough.
  • Bake into preheated oven, for 25 to 30 minutes.
  • Remove from heat and leave to cool slightly, before cutting into squares.
