Apple Pudding

  • 1/2 cup [115 g] butter or margarine
  • 3/4 cup [175 g] sugar
  • 2/3 cup [90 g] flour
  • 1 teaspon [5 mL] baking powder
  • 1/2 teaspoon [2.5 mL] cinnamon
  • 1 pinch salt
  • 2 tablespoons [30 mL] cold water
  • 2 eggs, slightly beaten
  • 1 pound [454 g] cooking apples
  • Preheat oven to 350°F [180°C].
  • Cream together butter or margarine and sugar.
  • Into a bowl, mix together all dry ingredients [flour, baking powder, cinnamon and salt].
  • Alternately with cold water, mix dry ingredients into first mixture; mix in beaten eggs.
  • Peel and core apples; dice then mix apple dices into dough.
  • Pour dough into a buttered mold.
  • Bake pudding into preheated oven, until golden brown.
