Carrot Cake

  • 1 cup [200 g] sugar
  • 1 cup [250 mL] oil
  • 3 eggs
  • 2 cups [500 mL] grated carrots
  • 1 1/2 cups [210 g] flour
  • 1/3 teaspoon [1.6 mL] salt
  • 1/3 teaspoon [1.6 mL] baking powder
  • 1 1/2 teaspoons [7.5 mL] baking soda
  • 1/2 cup [125 mL] chopped nuts
  • Preheat oven to 350°F [180°C].
  • Into a large bowl, beat together sugar, oil and eggs; mix in grated carrots.
  • Into a clean bowl, mix together flour, salt, baking powder and baking soda.
  • Mix dry ingredients into first mixture.
  • Mix chopped nuts into dough.
  • Evenly pour dough into a buttered and floured bread pan.
  • Bake cake into preheated oven, for 40 minutes.
  • Remove from oven and leave cake to cool in pan for a few minutes,
  • Unmolding cake onto a wire rack; leave to cool completely, before serving.
