- 1 cup [200 g] sugar
- 1 cup [250 mL] oil
- 3 eggs
- 2 cups [500 mL] grated carrots
- 1 1/2 cups [210 g] flour
- 1/3 teaspoon [1.6 mL] salt
- 1/3 teaspoon [1.6 mL] baking powder
- 1 1/2 teaspoons [7.5 mL] baking soda
- 1/2 cup [125 mL] chopped nuts

- Preheat oven to 350°F [180°C].
- Into a large bowl, beat together sugar, oil and eggs; mix in grated carrots.
- Into a clean bowl, mix together flour, salt, baking powder and baking soda.
- Mix dry ingredients into first mixture.
- Mix chopped nuts into dough.
- Evenly pour dough into a buttered and floured bread pan.
- Bake cake into preheated oven, for 40 minutes.
- Remove from oven and leave cake to cool in pan for a few minutes,
- Unmolding cake onto a wire rack; leave to cool completely, before serving.
