Bran Muffins

Comments: Serve these muffins warm.
Servings: 12 muffins
  • 1 1/2 cups [375 mL] bran flakes cereals
  • 2/3 cup [160 mL] milk
  • 1 egg
  • 1/4 cup [60 g] margarine or shortening, softened
  • 1 cup [140 g] flour, sifted
  • 2 1/2 teaspoons [12.5 mL] baking powder
  • 1/2 teaspoon [2.5 mL] salt
  • 1/4 cup [60 g] sugar
  • Preheat oven to 350°F [180°C].
  • Into a large bowl, mix together cereals and milk.
  • Set aside until milk is almost completely absorbed.
  • Add egg and softened margarine or shortening; beat well.
  • Sift together sifted flour, baking powder, salt and sugar.
  • Add dry ingredients to cereals mixture; stir just enough to wet dry ingredients.
  • Fill 12 muffin tins up to 2/3rds with dough.
  • Bake muffins into preheated oven for 25 to 30 minutes, until golden brown.
