Doughnuts

  • 3 eggs
  • 1/2 cup [115 g] butter
  • 1 cup [200 g] sugar
  • 4 cups [560 g] flour
  • 4 teaspoons [20 mL] baking powder
  • 1 1/2 cups [375 mL] milk
  • 1 1/2 cups [340 g] shortening
  • Beat together eggs, butter and sugar until smooth.
  • Mix togehter flour and baking powder.
  • Slowly mix flour mixture, alternately with milk, into first mixture.
  • Roll dough until approximately 1/2 inch [1.3 cm] thick; using a doughnut cutter or a drinking glass and a thimble, cut dough into doughnut shapes.
  • Into a large casserole, heat shortening until a thermometer registers 360°F [182°C].
  • Brown 3 or 4 doughnuts at a time on one time into hot fat; turn doughnuts around and brown on other side.
  • Using a slotted spoon, remove doughnuts from hot fat; leave to drain onto paper toweling.
