Refrigerator Cookies

  • 1 cup [225 g] butter or margarine
  • 1/2 cup [125 mL] brown sugar
  • 1/2 cup [100 g] sugar
  • 1 egg
  • 2 cups [280 g] flour
  • 1/2 teaspoon [2.5 mL] baking soda
  • 1/2 teaspoon [2.5 mL] vanilla
  • Cream butter or margarine.
  • Beat in brown sugar, sugar, egg and vanilla.
  • Mix together flour and baking soda; well mix into first mixture.
  • Shape dough into a roll and wrap dough into waxed paper; refrigerate for 1 hour.
  • Preheat oven to 350°F [180°C].
  • Thinly slice cold dough; arrange onto a cookie sheet.
  • Lightly brown cookies into preheated oven, for 5 to 6 minutes.
  • Leave cookies to cool slightly before transferring them onto wire racks.
  • Leave to cool completely.
