Marshmallow Vanilla Fudge

  • 2 1/2 cups [500 g] sugar
  • 1/4 cup [60 g] butter or margarine
  • 3/4 cup [190 mL] evaporated milk
  • 3/4 cup [190 mL] marshmallow paste
  • 3/4 teaspoon [3.75 mL] salt
  • 3/4 teaspoon [3.75 mL] vanilla
  • Into a casserole, mix together sugar, butter or margarine, evaporate milk, marshmallow paste and salt.
  • Using a beater, beat together all ingredients.
  • Stirring, bring mixture to a boil over medium heat; leave to simmer for 5 minutes.
  • Remove from heat, mix in vanilla, then pour mixture into a 9-inch [23-cm] square mold.
  • Leave to cool, then refrigerate mixture until hardened.
  • Serve, cut into squares.
