One Egg White Cake

Servings: 1 [9-inch / 23-cm] square cake
  • 4 tablespoons [60 g] butter
  • 1/2 cup [100 g] sugar
  • 1 egg
  • 2 cups [280 g] flour
  • 1 teaspoon [5 mL] baking soda
  • 1/2 cup [125 mL] milk
  • 1/2 cup [125 mL] water
  • 1 cup [250 mL] raisins and/or chopped nuts, or to taste
  • Preheat oven to 375°F [190°C].
  • Cream butter, then beat in sugar and egg.
  • Sifat together flour and baking soda.
  • Mix raisins and/or chopped nuts into dyr ingredients.
  • Mix together milk and water.
  • Alternately with milk/water mixture, mix dry ingredients into first mixture.
  • Pour dough into a buttered and floured square 9-inch [23-cm] cake pan.
  • Bake into preheated oven, for 35 minutes.
  • Remove from oven and leave cake to cool for a few minutes.
  • Unmold cake onto a wire rack; leave to cool completely.
