Mint Parfaits

Servings: 4
  • 2 cups [500 mL] vanilla ice cream
  • Approximately 1/2 teaspoon [2.5 mL] mint extract [2 thimbles]
  • Green food coloring, to taste
  • Lightly soften vanilla ice cream mixing in mint extract.
  • Color mixture to taste using green food coloring; freeze to harden.
  • Serve mixture into nice individual dessert dishes.
