Soup with Meatballs for Babies and Toddlers

Comments: Tiny tender juicy meatballs, poached into a vegetables soup.
In order to serve this soup to babies and toddlers, these meatballs, even though they are delicious, are not salted. When preparing these meatballs for adults, you could prefer to salt and pepper these with freshly ground pepper.
To serve this soup to babies and toddlers, crush meatballs using a little of the vegetables soup or serve them whole, along with a spoonful of soup so that they really are wet and juicy, or serve remaining meatballs cold.
For the family, serve the meatballs into the soup, sprinkled to taste with salt and pepper.

  • 1 small onion, peeled
  • 1 carrot, peeles
  • 2 or 3 celery stalks
  • 1 [approximately 7-ounce / 200-g] wedge turban squash or pumpkin
  • 6 cups [1.5 L] water
  • 1/2 teaspoon [2.5 mL] salt
  • 2 tablespoons [30 mL] chopped parsley
  • 2 tablespoons [30 mL] brown rice
  • 1 [14-ounce / 398-mL] can tomatoes with juice or tomato juice
Meatballs
  • 8 3/4 ounces [250 g] lean ground beef
  • 4 tablespoons [60 mL] white breadcrumbs
  • 3 tablespoons [45 mL] milk
  • 1 tablespoon [15 mL] tomato sauce
  • Really finely chop onion, carrot and finely [easier into a food processor].
  • Pour mixture into a deep casserole.
  • Peel turban squash or pumpkin, remove seeds then finely chop meat, into food processor if possible.
  • Mix into vegetables into casserole; pour in water, salt then mix in chopped parsley.
  • Bring to a boil.
  • Mix in brown rice and simmer for 20 minutes.
  • If using canned tomatoes, press tomatoes and juice through a sieve to remove any seed.
  • Stir pressed sieved tomatoes or tomato juice into soup.
  • Simmer for approximately 45 minutes.
  • Meanwhile, prepare meatballs.
  • After 45 minutes simmering time, add meatballs to simmering soup.
  • Lower heat to simmer.
  • Leave meatballs to poach into soup until well done, for approximately 30 minutes, without boiling.
Meatballs
  • Well mix together ground beef, white bradcrumbs, milk and tomato sauce.
  • Wet your hands, then shape mixture into 15 tiny balls.
