- Approximately 7 unpeeled small zucchinis

- Brushing, rinse unpeeled zucchinis under cold running water.
- Cut zucchinis into approximately 1/2-inch [1.3-cm] dices [you should get approximately 3 cups / 750 mL zucchini dices].
- Steam zucchini dices for 10 to 12 minutes, until soft.
- Leave to cool slightly, drain then transfer half of zucchini dices into a blender.
- Puree until smooth.
- Repeat with remaining zucchini dices.
- Spoon into 2 ice cube trays, and freeze.
