Barbecue Meat Loaves [camp fire]

IngredientsPreparation
  • 2 pounds [900 g] ground beef
  • 1 onion, finely chopped
  • 1/4 cup [60 mL] chopped parsley
  • 2 carrots, peeled then grated
  • 3/4 teaspoon [3.75 mL] salt
  • 1/4 teaspoon [1 mL] pepper
  • 1/2 cup [125 mL] breadcrumbs
  • 2 eggs
  • 1/2 cup [125 mL] ketchup
  • Any desired barbecue sauce, to taste
  • Prepare a charcoal fire on the spot provided on your site; preheat until hot.
  • Into a bowl, well mix together ground beef, chopped onion and parsley, grated carrots, salt, pepper, breadcrumbs, eggs and ketchup.
  • Shape mixture into 6 patties.
  • Arrange each patty onto 2 sheets heavy aluminum foil large enough to wrap each patty.
  • Seal then transfer onto preheated rack over hot embers.
  • Cook meat loaves for 45 to 60 minutes, until ground beef is well-done.
  • Delicately remove meat loaves from wrappings and arrange directly onto hot rack.
  • Using a brush, generously coat meat loaves with barbecue sauce.
  • Cook for 5 minutes more.
  • Turn then brush meat loaves once more with barbecue sauce.
  • Cook for 5 minutes more.
