Camper's Rice [barbecue or camp fire]

Comments: A small casserole and a frying pan are needed.
If desired serve this rice along with egg-rolls after reheating them onto barbecue or campfire rack, or into a frypan over low heat.

  • 1 cup [250 mL] 5-minute white rice
  • 1 onion, diced
  • 1 sweet pepper, membranes removed and seeded, diced
  • 1 [6 1/2-ounce / 184-g] can well-drained turkey or chicken, diced
  • 1 tablespoon [15 mL] soy sauce
  • Fat
  • Boil rice following into salted boiling water until 'al dente'; drain well.
  • Stir fry together onion and sweet pepper dices for approximately 5 minutes.
  • Mix in drained rice, turkey or chicken dices and soy sauce until well-blended.
  • Reheat until hot.
