International House of Pancakes [IHOP]® Pancakes

Servings: 8 to 10 pancakes
  • Nonstick Spray
  • 1 1/4 cups [175 g] all-purpose flour
  • 1 egg
  • 1 1/4 cups [310 mL] buttermilk
  • 1/4 cup [60 g] sugar
  • 1 heaping teaspoon [5 mL] baking powder
  • 1 teaspoon [5 mL] baking soda
  • 1/4 cup [60 mL] cooking oil
  • Pinch of salt
  • Preheat a skillet over medium heat [either use a pan with a nonstick surface or apply a little nonstick spray].
  • Into a blender or using an electric mixer, combine all of the remaining ingredients until smooth.
  • Pour spoonfuls of batter into the hot pan, into 5-inch [12.7 cm] circles.
  • When the edges appear to harden, flip pancakes over [they should be golden brown].
  • Cook pancakes on the other side for same amount of time, until golden brown.
