  • 4 ounces [113 g] breakfast sausages
  • 1 tablespoon [15 mL] minced white onion
  • 1 1/2 teaspoons [7.5 mL] minced canned mild green chilies
  • 4 eggs, beaten
  • Salt and pepper, to taste
  • 4 [8-inch / 20-cm each] flour tortillas
  • 4 slices Cheddar cheese
  • Salsa, to serve [optional]
  • Preheat a skillet over medium heat.
  • Crumble sausages into the frypan before mixing in minced onion.
  • Stirring, fry together sausage meat and minced onion for 3 to 4 minutes, to brown sausage meat.
  • Mix in mild green chilies; fry, stirring, for 1 more minute.
  • Pour beaten eggs into frypan; scramble together eggs, sausage meat mixture and minced mild green chilies.
  • Sprinkle with a dash of salt and pepper.
  • Heat tortillas by steaming them into a microwave oven wrapped into moist paper toweling or into a tortilla steamer, for 20 to 30 seconds.
  • Half each slice of cheese; position 2 halves end-to-end into the middle of each tortilla.
  • To make the burrito, spoon 1/4 of scrambled egg mixture onto the cheese onto each tortilla.
  • Fold one side of tortillas over the filling, then fold up about 2 inches [5 cm] of one end.
  • Fold over the other side of the tortilla to complete the burrito [one end should remain open].
