Red LobsterŪ Bacon-Wrapped Stuffed Shrimp

While devouring these shrimps, you can always feed the dog with bacon leftovers.

IngredientsPreparation
  • 5 bacon slices
  • 1 cup [250 mL] water
  • 5 large shrimps
  • 3 fresh Jalapeņo peppers
  • 1 ounce [28 g] pepper Montery Jack cheese
Seasoning
  • 1/4 teaspoon [1 mL] salt
  • 1/4 teaspoon [1 mL] paprika
  • Hint of ground black pepper
  • Hint of Cayenne pepper
  • Hint of allspice
Dip
  • 1/3 cup [80 mL] 'Ranch' salad dressing
  • 1/4 teaspoon [1 mL] dried cilantro
    or
    1/2 teaspoon [2.5 mL] freshly chopped cilantro
  • Into a small bowl, mix together all seasoning ingredients; set aside.
  • Into a medium bowl, combine 'Ranch' salad dressing with dried or fresh cilantro; reserve dip.
  • Fry bacon slices into a frying pan over medium-high heat for approximately 3 minutes on each side, being careful not to let it become crunchy; reserve.
  • It should not be too cooked as, after leaving it laying flat to cool completely onto paper toweling to get rid of all the melted fat, it will have to be easy to handle as it will have to be wrapped around each shrimp.
  • Pour water into a small microwave oven-safe dish; add shrimps and Jalapeņo peppers.
  • Microwave on 'HIGH' for 60 to 90 seconds.
  • Shrimps should just start to harden and change colour.
  • Immediately drain shrimps removing Jalapeņo peppers; reserve separately.
  • Preheat oven broiler.
  • Well dry shrimps and Jalapeņo peppers onto paper toweling to remove any excess of water.
  • Then, half Jalapeņo peppers lengthwise to get 6 slices even though only 5 slices are needed; seed pepper slices.
  • Peel shrimps leaving tails on; remove black veins.
  • Butterfly shrimps cutting through the back of each shrimp, creating a pocket.
  • Slide one slice Jalapeņo pepper into each pocket.
  • Cut pepper Montery Jack cheese into 5, approximately 1/4-inch [6-mm] thick and 1-inch [2.5 cm] long, sticks.
  • Arrange cheese sticks over pepper slices.
  • Starting with narrow end of bacon slices, wrap one slice bacon, turning 1 1/2 times, around each stuffed shrimp, starting at one end of cheese stick.
  • Starting at cheese stick end, thread one wrapped stuffed shrimp onto a skewer piercing through the slice of bacon at the other end.
  • Thread remaining shrimps proceeding in the same manner, tails always on the same side as the first one.
  • Transfer skewer onto a baking sheet or into a frying pan; really lightly sprinkle with reserved seasoning mixture.
  • Broil skewer under hot preheated broiler for 3 to 4 minutes, until bacon starts to brown and cheese is oozing.
  • Serve immediately, along with reserved dip.
